Recipe Help

Remember when I told you all about how we were going to buy a cow? Not a real one! We live in the 'burbs for crying out loud!

Well, we bought that half a cow and I'm realizing we still have a lot of beef leftover! And, a large portion of it is ground beef. So, tell me, what are your favorite ways to cook with ground beef. My husband is not a very big fan of tacos, unfortunately.

So, I'm asking you interwebs for some recipe ideas for ground beef. Something kind of healthy would be a bonus, but not required.

Some of my favorite uses for ground beef (besides tacos, which is my favorite, ha!) is chili, stuffed peppers and of course lasagna!! Yum! I also found a recipe for a beef-spinach-cheese-tomato sauce baked pasta dish that we like as well. I can forward any of them, let me know!

This recipe seems like a LOT of effort for a sandwich, but trust me, it's wonderful! And, it uses a cut of meat I don't see in many recipes:

There are oh so many things you can do with ground beef! Here are a few of my faves--some say to use ground turkey but they work just as well with beef:

--GREAT meatloaf, I use extra ketchup: http://www.foodnetwork.com/recipes/ellie-krieger/moms-turkey-meatloaf-recipe/index.html

--delicious chili with bonus veggies: http://allrecipes.com/recipe/terrific-turkey-chili/

--mexican style stuffed peppers:

--marsala burgers:http://annies-eats.com/2011/05/11/marsala-burgers/

--might be too close to tacos, but I make a taco salad for a quick and easy meal

Ideally you might prefer another meat over ground beef in these, but I think you could also use ground beef in pasta dishes like spaghetti with meat sauce or meatballs and lasagna. I also think with some improvisation you could do a beef stroganoff and definitely a beef stew.
