Tuesdays at the Table - Spicy Okra

One of the great things about summer is the wonderful produce you just can't get at other times of the year. Okra is one of those foods.

I recently purchased a bag of okra at a local produce stand but then wondered what to do with it. So, I looked around in my cookbooks for some ideas and came up with this. And, it was delicious! So much so that I could eat just this over some rice for a meal.

Spicy Okra

1 pound fresh okra
1 tablespoon vegetable oil
1 medium onion, coarsely chopped
1 (14-oz) can diced tomatoes
1 fresh habanero chile, pierced 3 times with a fork
1/2 teaspoon salt
1/4 teaspoon black pepper

Rinse okra in a colander under hot water and chop

Heat oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking.
Add onion and sauté, until golden, about 3 minutes.
Add tomatoes (including juice) and chile pepper and boil, stirring, until tomatoes are softened and liquid is reduced by half, about 5 to 10 minutes.
Add okra and cook, gently stirring, until okra is tender, about 5 minutes.
Stir in salt and pepper and discard chile.

Note: This can also be made with frozen okra. I would suggest 2 (10-oz) packages frozen cut okra.

That sounds so yummy!! I haven't cooked w/okra in a long time and I think I might have to!

This sounds really good. I'm the only one in my house that likes okra but who cares.
