Sunday night we hosted our church small group at our house. How we work is whoever hosts generally makes the main dish since that's usually the least portable. Since it's the end of summer (so they tell me, still feel like summer to me) I decided to try out "barbecue" chicken sandwiches.
After making the chicken for my enchiladas a few weeks ago I wanted to try a barbecue version. Here's the recipe:
Slow cooker "barbecue" chicken
6 to 8 boneless, skinless chicken breasts
3 cups barbecue sauce
1 cup brown sugar
3 tbsp Worcestershire sauce
Place chicken in slow cooker. (Thawed chicken likely works best, but I think frozen would be okay as well.)
Mix together other ingredients. Pour over chicken and stir gently to coat and get worked into the chicken.
Cook on high for 4 to 4 1/2 hours or on low for 7 to 8 hours. Stir a few times to rotate chicken breasts.
After cooking, shred chicken. (I used two forks as the chicken was very hot.) Serve with the extra sauce and bread of your choice.
This was very good. We were expecting eight adults and two children, but had lots leftover since we only had six adults. I'm planning to top a salad with the leftovers tonight.
