Chocolate Mousse with Chantilly Cream
It was very much inspired by Julie & Julia and its signature dish!
We left so stuffed! I have to admit, I've never seen French Onion Soup as intimidating or elusive. Caramelize the onions, add some seasonings and broth. And, most importantly, melt some great cheese over the soup and a crouton. I did,however, learn a new way to caramelize onions without lots of butter and I'll be sure to post the technique once I've tried it out a few times.
The Ratatouille was average in my opinion. I'm a big fan of zucchini and yellow squash and this one was made with sweet potatoes. It was okay and I think I prefer my Vegetable Gratin since it has a deeper flavor.
The piece de resistance was the Boeuf Bourguignon. I should admit to you all that I did eat it (and like it). I haven't eaten beef since high school. No kidding. In more years than I want to publish on the interwebs I have not eaten beef. I knew the menu when I signed up for the class but I didn't really decide to actually try it until last night. I kind of figured I could eat the other ingredients and not the beef if I chickened out. Well, I ate it and it was so good! (I feel kind of guilty admitting that.) Good enough that I just MIGHT try this recipe at home. Maybe.
The chocolate mousse of course was divine and it pushed me over the edge. I should only have had one bite. It was so good I had to have the dish to my husband to get it out of my reach. One thing the chef did differently than I had seen was the type of vanilla she used. It had SO much flavor, such a warm and mellow vanilla (because of the beans she said). I had to buy some and I've been perusing recipes to put this in this weekend. It was such a wonderful flavor.

Now, I want to make something wonderful for dinner this weekend. I think I'm heading to Google for some ideas...

OMG - I would have had to have eaten this near a bed since food coma would have been immediate - sounds amazing!

I'm jealous. That sounds like such a fun class. I use that vanilla for everything. Try their other flavorings too. The almond is unbelievable.
