I made this last night and it was SO easy and quite delicious. I'd love to know if you like it too.
Chicken Cacciatore
Ingredients
1 16 oz pkg egg noodles
1 lb boneless skinless chicken breast, cut into strips
2 tbsp olive oil
1 tsp crushed red pepper
1/2 tsp garlic salt
1 small onion, thinly sliced
1 green pepper, thinly sliced
2 tsp fresh minced garlic
1 jar (26 oz) Marinara sauce of your choosing
Shredded Parmesan cheese
Preparation:
In a large pot, cook noodles according to package directions; drain well and return to pan.
Meanwhile, in a large skillet, heat olive oil over medium high heat.
Add chicken, garlic salt, red pepper, onion and garlic; cook 8 to 10 minutes or until chicken is cooked through and vegetables are crisp tender.
Add marinara sauce to chicken mixture; continue cooking on medium-high heat until sauce is heated through.
Add noodles to the mixture in pan; stir well to combine.
Transfer to serving dish and sprinkle with Parmesan cheese; serve immediately.
I served this with hunks of fresh baguette to scrape up the sauce. It was delish! Bon Appetit!
P.S. This makes six servings for a WW points value of 7 points.
