
As I've mentioned before I was a vegetarian for many, many years before adding back in seafood. Then, I got married and added back in poultry and now I'm an omnivore. I tried to eat vegan for a while and was never quite good enough on it to stick with it. But, I did feel good and healthy. I didn't get sluggish from eating junk and bloated from too much dairy. I felt great!
But, alas, I love cheese. And ice cream. And yogurt. So, it's hard for me to eat vegan very often. It's impossible when I'm cooking for my husband who insists he cannot go without meat for lunch or dinner. (I'll never understand this one.)
So, yeah, if I could do it, I would go vegan and stick with it. What about you?

Vegan is a bit too extreme for me (I could never give up steak, cheese, and seafood), but I don't mind eating vegetarian or pescatarian meals now and then. And I can even get DJ (who is pretty similar to your husband in the meat area) to go without meat occasionally. But only if it's pasta. And not for more than one meal a day.
I love being a vegetarian. And I'm very lucky to have a husband that not only doesn't care about it but also that hes willing to go meatless a LOT more than I think he would if he lived alone. But I know what you mean about having a hard time with it and adding things back in. I've always considered adding meat back into my diet while we're having kids but it's been a struggle for me as that time is actually getting closer. Yes? No? It's so difficult.
I haven't eaten meat since i was 6 and so i would say I am a vegetarian, but I still eat seafood so I guess that really makes me a pescetarian. I have idly considered being a vegan, but not seriously--I love my cheese and ice cream too much! I definitely feel I live a healthier lifestyle by not eating beef or pork or chicken or turkey for that matter, nothing with a face--except shrimp. They must have faces??!! I feel kind of bad about eating shrimp.
ps. As for my husband, he does eat a great deal of meat, but he tries not to do it in front of me. For example, when we are at a restaurant he tries not to get anything too disgusting like steak. I can tolerate him eating a piece of chicken much easier. And then at home, he cooks or grills his own meals and I stay out of his way. I eat my own veggie meals at a different time or in a different room. Maybe we are an odd couple, but we rarely sit down at our dining room table at the same time and have a meal--unless it is something we can both agree on--like spaghetti or pizza. Otherwise, I just can't be around him when he is eating meat. It makes me physically ill.
