Reindeer Food

Each year for Christmas my husband's family does food gifts. There are a few things that everyone has come to expect from certain family members. For example, one uncle always makes brownies and another always makes peanut brittle.

Last year, I made homemade Hot Cocoa mix for everyone.This year, since we were traveling to Minneapolis to celebrate, I wanted to make something portable. so I chose this:

Chex Mix Reindeer Food

9 cups Corn Chex, Rice Chex, or Chocolate Chex cereal (or combination)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

It was so tasty and everyone loved it. At least, that's what they told me. And, the best part is how easy it is.

Next year, we'll be back in Baton Rouge for our Christmas celebration so I can make something that travels by car. Any suggestions?

YUM! That sounds really good!

Popcorn balls, biscotti and homemade granola or trailmix all travel really well.
