Adventures in home repair and a fabulous recipe

Last night, my husband went to the store for me on his way home from work. I asked him to pick up an onion for my dinner I was making, Shrimp Risotto. 

So, he comes home and then decides to change the water filter on the fridge. I should preface this story by saying we very much dislike the people who lived here before us. They did some wack s**t to this house. If there was a crazy way to do something, or a half-a** way to call it "fixed" that's what they did. So, my husband unscrews the old filter and immediately water starts spraying everywhere. ALL OVER THE KITCHEN! We're talking a small flood in our house. (Yes, we need a shop vac, but don't have  one yet. So, now we have two washer loads of towels to clean.) So, after unhooking the water from the fridge (since it would turn enough to go off) he replaced the filter and we cleaned up the floor. Phew! What a night! 

Afterward, I got to make my recipe I wanted to try, Shrimp Risotto. I kind of didn't want to make it after cleaning up the floor, but hadn't thawed anything else and we have dinner plans for the next three nights, so take out was not an option. I did make it and it was SO GOOD! The hubby even went back for seconds! (He doesn't do this often so it' a huge compliment in my opinion.) He has enough for lunch tomorrow as well. Here's the recipe for those interested in a yummy, man-pleasing dinner...

Shrimp Risotto

2 tbsp butter
2 tbsp olive oil
1/2 of a chopped onion
1 cup arborio rice
2 cups chicken or vegetable broth
1 cup white wine (not cooking wine)
10 to 12 oz. raw shrimp
salt and pepper to taste

In a pan melt butter and olive oil together. Add onion and saute for about three minutes. Add rice and saute for about 2 to 3 minutes. Add 1 cup of the broth and cook until absorbed. Stir frequently if not continuously until liquid is absorbed. Add second cup of broth and continue to cook until absorbed. Pour in white wine and cook until about half is absorbed. Add shrimp and cook until remaining liquid is incorporated almost completely. Salt and Pepper to taste. Makes four servings. Enjoy!

This was much easier than I thought it would be (pretty much adding shrimp to basic risotto) and almost as good as at a restaurant. I served it with some steamed asparagus and wine of course!

That sounds like a very impressive dinner. I am sorry to hear about the water hassle!

Yum... I love Risotto. I tried to make it once and it was horrible. I'll have to try your recipe. Thanks for sharing.
